I have seen an Aussie 4 door 1500 with a plastic 3 spoke steering wheel. Kicking myself that I didn't grab it as it looked really good.

Yeah, but all wagons were 1500's, at least in North America. I wonder if the 4/5 doors that were in other markets still followed the 2-spoke/1200 3-spoke/1500 rule?

All 1200's got the 2-spokes, all CVCC/1500's got the 3 spokes. Didn't matter if it was wood or plastic.

I have a two spoke steering wheel (plastic not wood). I thought they were all three spokes or is that just the wood ones?
